Ingredients:
Water: 1 cup (220 ml)
Fresh yeast: 34 tsp. (3 g) or dry
pt y or dry yeast:
tsp. (2g)
(Optional) Sugar: 1 tsp. (4g)
Bread flour: 2 ¥2 cups (320 g)
Salt: 1 tsp. (6 g)
方法:
1. 以上材料 mix 好, cover and rest 30min.
2. 用一杯水, 濕手進行 4 fold 東南西北方向,
use "lift and slap" :拉起麵團,大力撻返落去"
然後 cover, rest 30min
3. Again use water to 4 fold, then lift and slap.
然後 cover, rest 2 hrs
4. 分4份,
5. 每個面团鎅一刀, 灑上少少粉在面。
兩邊放少少水
